What does a histamine intolerance nutritionist do?
A histamine intolerance nutritionist works out why histamine is building up in your body, then builds a food and supplement plan to lower the load and help you clear it. I am Kirstie Vesseur, a Registered Clinical Nutritionist based in Te Awamutu, working online with women across New Zealand and Australia. I look at your gut, hormones, DAO enzyme, genes and stress together. The goal is always a wider diet, not a longer list of foods to avoid.

A ROOT CAUSE APPROACH
Why histamine builds up
It's rarely just the food. These are the drivers I look for first:
- ✓Low DAO enzyme in the gut lining
- ✓Gut inflammation, SIBO or dysbiosis
- ✓Histamine-producing gut bacteria
- ✓Oestrogen dominance and cycle shifts
- ✓Slow clearance genes: DAO, HNMT and MTHFR
- ✓Low B6, copper, zinc or vitamin C
How I test
Comprehensive stool analysis
Histamine-producing bacteria, inflammation and gut barrier markers.
Blood tests, read for optimal
Iron, B12, B6, zinc, copper and vitamin D, read against optimal ranges.
Food and symptom mapping
Which foods, how fresh they are, and where you are in your cycle.
Nutrigenomics
DAO, HNMT and MTHFR genes that slow histamine clearance.
Testing is used where it changes the plan, never as a box to tick.
REAL STORIES · ★★★★★ GOOGLE REVIEWS
“She has listened, and put a lot of thought into what could help me along the way, more so than any of my doctors have so far. I have gained much more understanding about why my body is the way it is, about histamine and MCAS issues, stress, gut imbalance, vitamin deficiencies and where to focus.”
“I have gone from having such bad anxiety that I was homebound, to now able to manage my symptoms. I highly recommend her to anyone suffering from unbalanced hormones, gut issues or just needing answers because your GP isn’t able to identify what is going on for you.”
“For years I had been jumping from practitioner to practitioner, specialists, and Doctors, and had no luck until I found Kirstie. Working with Kirstie is the best thing I’ve done for my health.”
“Together we learned the things that were really impacting my body. Kirstie was honest, kind and it was like talking to a best friend who held you accountable.”
Start with the clinic protocol
The Histamine Blueprint is my clinic protocol: a 2 to 4 week low-histamine reset, the foods to bring back first, and the supplements I use. The Gut and Histamine Bundle adds my gut protocol too. Read more: histamine intolerance in NZ and Australia and how your genes drive histamine overload.
Questions
Do I have to stay on a low-histamine diet forever?
No. A strict low-histamine diet is a short 2 to 4 week reset. Then we work on why histamine is building up and bring foods back in, one at a time.
Can I work with you from Australia?
Yes. All consultations are online, so you get the same programme, testing and support wherever you live in Australia. Prices are in NZD and your card converts automatically. Health insurance rebates apply to New Zealand clients only.
Is there a test for histamine intolerance?
There is no single reliable test. I use your symptom pattern and a short food trial, then add a stool test, DAO genes or bloods when it will change your plan.
How long until I notice a difference?
It depends on what's going on for you. Some women notice a difference within the first week. Others with longer-standing or more complex symptoms take longer, and we track your progress at every session.
Is it claimable on health insurance?
Many NZ policies cover a Registered Clinical Nutritionist. You get receipts for every claim.
